ORIGIN
Vineyards owned by the winery, grown using the espalier system, with Guyot pruning, on medium-textured granite disintegration soils, tending towards sandy, in the Arzachena area.
PROCESSING
It is made from the same grapes intended for Sciala, but harvested late. The must remains in contact with the skins for 12/24 hours at a temperature below 10 degrees. Fermentation takes place half in large, untoasted French oak barrels and half in steel and cement tanks. The blend evolves in the presence of its own yeasts in steel and cement tanks for 6 months. Finally, it rests in the bottle for at least 9 months.
CHARACTERISTICS
Color: straw yellow with golden reflections.
Aroma: intense bouquet with notes of ripe fruit and Mediterranean scrub.
Taste: soft, long, broad and persistent, with fruity hints, mineral and tertiary notes.
COMBINATIONS
Mount Idimola It is a white wine that goes well with seafood, but it is also perfect with delicate white meat dishes, risottos and first courses based on aromatic ingredients such as mushrooms and truffles.
