ORIGIN
Vineyards owned by the Winery, on the hills around Mogoro, on calcareous soils rich in sandy skeleton.
PROCESSING
The harvest is manual with the grapes being pressed within a few hours of harvesting. It is vinified in steel, with a controlled fermentation temperature and the use of selected yeasts. It always evolves in steel, refines on fine lees in batonnage for about 40 days. If stored in optimal conditions it is excellent even after two years.
CHARACTERISTICS
Color: straw yellow with greenish reflections
Aroma: notes of small white flowers and fruits such as green apple, citrus peel and hazelnuts.
Taste: In the mouth it is fresh and quite savoury, full-bodied, slightly soft, with a good aroma.
COMBINATIONS
It pairs well with leafy vegetable dishes, such as spinach and chard. Perfect with delicate first and second courses: try it with sole parmigiana.
