Ajò Nuragus di Cagliari 2020
The name Ajò comes from the Sardinian dialect and means "let’s go", "force", also used to spur and incite someone to perform an action.

Vineyards owned by the winery, on the hills around Mogoro, on calcareous soils rich in sandy skeleton.
PROCESSING AND AGING
The harvest is done by hand with the grapes within a few hours of harvesting. Vinification in steel, with controlled fermentation temperature and use of selected yeasts. It always evolves in steel, it ages on fine lees in batonnage for about 40 days. If stored in optimal conditions it is excellent even after two years.
Color: straw yellow with green reflections
Bouquet: notes of small white flowers and fruit such as green apple, citrus peel and hazelnuts.
Taste: In the mouth it is fresh and quite sapid, full-bodied, slightly soft, good aroma.
It goes well with dishes of leafy vegetables, such as spinach and chard. Perfect with first and second courses: try it with the sole parmesan.
