PROCESSING
Cold maceration of the skins for 48 hours at a temperature of 12° C. Alcoholic fermentation in steel. Malolactic fermentation entirely carried out in barriques. Aged in Allier barriques for 12 months and in bottle for another 3 months.
CHARACTERISTICS
Color: deep red.
Aroma: intense bouquet with notes of plum and cherry in alcohol, with balsamic nuances of eucalyptus.
Taste: rich, full, warm, with a nice spicy and quinine finish.
COMBINATIONS
Perfect wine to accompany chocolate or cocoa desserts.
