PROCESSING
Anghelu Ruju is made from only Cannonau grapes dried for 15/20 days on cane frames raised from the ground and covered every night for protection in case of bad weather. Fermentation at a controlled temperature that is blocked with the help of cold at 100 g/l of residual sugars. It matures in steel for the first 6 months, then when we proceed with the fortification to bring the alcohol concentration up to 19%. It then spends at least 7 years in oak barrels.
CHARACTERISTICS
Color: dark garnet red.
Aroma: on the nose it expresses aromas of blackberry jam and dried berries, hints of tobacco and cocoa.
Taste: warm, full, enveloping, long and complex on the palate. Great persistence.
COMBINATIONS
Anghelu Ruju is an excellent meditation wine, extraordinarily versatile when paired with cheeses and as an after-dinner drink, where it accompanies all types of desserts, particularly enhancing chocolate-based ones.
