Vineyards trained using the Guyot system in the lower Tirso valley, on alluvial soils of clayey-sandy nature.
PROCESSING
Early manual harvest at the end of August. Soft pressing of the bunches followed by clarification of the free-run must, which is then fermented at 15°C in stainless steel containers. The refinement always takes place in steel. to the second fermentation, in the medium bottle followed by the addition of sectioned yeasts and sugar, and once this phase is concluded, the bottles mature for eighteen months before dégorgement and mushroom corking.
CHARACTERISTICS
Color: bright straw yellow tending towards gold. Fine and persistent perlage.
Aroma: hints of dried and candied fruit, bread crust, almond and broom flowers, thyme, hazelnuts and rennet apple.
Taste: crisp, fresh and savoury, with fine and persistent aromas and a full sip, animated and refreshed by the lively perlage, encouraging you to take another sip!
COMBINATIONS
Aristanis is a sparkling wine perfect as an aperitif, which pairs with versatility with fish appetizers and first courses, but also with tempura vegetables and fried calamari.
