This wine was born as an experiment, certainly successful in 1997, from a blend of native grapes with a small part of Syrah. Assajé in Gallura dialect means "it's already something".

Bush-trained vineyards owned by the Ragnedda family, trained using the spurred cordon system in Sulcis and Gallura, at an altitude of between 20 and 100 metres above sea level.
PROCESSING
The grapes harvested between the end of September and the beginning of October are destemmed and then subjected to soft pressing. Fermentation and maceration follow in steel tanks for about 3 weeks. It is refined in steel and cement tanks. It is left to rest for 12 months in French oak barriques.
It is exceptional if left to age for 4-5 years in the cellar.
CHARACTERISTICS
Color: intense red with purple reflections
Perfume: fusion of ethereal and vinous notes, where black fruits, cherry in alcohol, blackberry, myrtle, spices, eucalyptus, cocoa and salty notes can be perceived at times
Taste: full, warm, savoury, with rich and concentrated ripe fruit and fine tannic texture; the finish is long and persistent.
COMBINATIONS
Ideal to accompany first courses with meat sauce, but also stewed, roasted and grilled red meat. Also perfect with game and mature cheeses.
