GRAPES Vernaccia

ORIGIN
Vineyards trained as saplings with Guyot pruning and spurred cordon, on alluvial, sandy and partly clayey soils, Valle del Fiume Tirso (OR).
PROCESSING
Early harvest to ensure grapes rich in acidity and therefore more suitable for secondary fermentation. They are subjected to soft pressing and the free-run must is sent to the first fermentation, with selected yeasts and rigorous temperature control, and then in an autoclave for the second fermentation, where Attilio Brut will be enriched with its precious bubbles.
CHARACTERISTICS
Colour : straw yellow, with strong greenish reflections, fine and persistent perlage.
Aroma: elegant aromas of white flowers such as honeysuckle, fresh fruit such as pear and notes of aromatic herbs stand out.
Taste : fresh and savoury but at the same time soft, creamy with foam, fine in aromas.
COMBINATIONS
Perfect aperitif wine, to accompany typical Sardinian dishes such as Carasau and cured meats, excellent at the table if paired with fried fish and vegetables.
