The term Balente derives from Balentia, which means value. The Balente is therefore one who is worthy, brave, courageous. In Sardinian it often also takes on a negative connotation of bandit.

ORIGIN
80-year-old vineyards owned by the winery, trained as saplings in the Ortueri countryside.
PROCESSING
The hand-harvested grapes are first destemmed, then vinified in red with traditional punching down of the skins. This is followed by maceration in steel at a controlled temperature between 25 and 28 °C. It is refined in the bottle for a year before being put on the market.
If stored properly, Balente can age for 10-15 years from the harvest.
CHARACTERISTICS
Color: bright and lively ruby red.
Aroma: intense with fruity, floral, mineral and spicy notes, with hints of Mediterranean scrub.
Taste: robust, the marked presence of alcohol is attenuated by acidity and balanced tannins. Pleasant and persistent finish.
COMBINATIONS
Balente is a red that pairs perfectly with traditional Sardinian cuisine: land appetizers, first courses such as macarrones with sheep ragù, second courses such as pan-fried lamb chops with artichokes and potatoes. Excellent with traditional Sardinian cheeses but also grilled red meats.
The ideal serving temperature is between 14 and 16 °C.
