Balente Mandrolisai Superiore
GRAPES Vermentino
ALCOHOL CONTENT 11%
ORIGIN
Selection of grapes harvested in the vineyards of Porruddu and Murvonis (Gergei).
PROCESSING AND AGING
20% of the grapes are harvested slightly in advance and fermented with maceration on the skins, partly in steel and partly in amphora, without adding selected yeasts, according to the BIOINTEGRAL method. This small mass is used as a “pied de cuve” to activate the spontaneous fermentation. The remaining part of the grapes, after destemming and soft pressing, is fermented in steel at 14 ° -16 ° C. It takes place for 70% in steel, "sur lie" and for 30% in Tonneaux, for 5-6 months . The wine is then assembled and clarified with only the use of Bentonite, followed by, before bottling, a light filtration with a minimal addition of sulphites.
