The term Balente derives from Balentia, which means value. The Balente is therefore one who is worthy, brave, courageous. In Sardinian it often also takes on the negative connotation of bandit.

ORIGIN
80-year-old vineyards owned by the winery, trained as saplings in the Ortueri countryside.
PROCESSING
The hand-harvested grapes are first destemmed, then vinified in red with traditional punching down of the skins. This is followed by maceration at a controlled temperature between 25 and 28 °C. It first ages for 12 months in steel, followed by 24 months in large 225-liter barrels. It is further refined in the bottle before being put on the market.
If stored properly, Balente can age for 10-15 years from the harvest.
CHARACTERISTICS
Color: impenetrable ruby red.
Aroma: notes of fruit jam, sweet hints of spices and Mediterranean herbs.
Taste: powerful flavour, whose notable alcohol content is well balanced between the structure and the well-integrated tannins. Persistent finish.
COMBINATIONS
Balente Superiore is a wine that gives its best with meat dishes, grilled and stewed, but also with mature and slightly spicy cheeses, first courses such as pappardelle with hare or wild boar ragù, second courses such as roast goat.
The ideal serving temperature is between 14 and 16 °C.
