ORIGIN
The vineyards at 400 meters above sea level, owned by the winery, are located in Benetutti, in the historic region of Goceano, the heart of Sardinia where the rare Arvisionadu vine is grown. The territory is predominantly sandy from granite disintegration with small quantities of clay and quartz.
PROCESSING
Once harvested, the grapes are destemmed and crushed. Alcoholic fermentation
spontaneous in stainless steel at a controlled temperature of around 25°/28°C. The macerations, lasting around 7-8 days, include daily pumping over, which allows it to obtain good structure and aroma. Malolactic fermentation then occurs, again spontaneously. Aged in stainless steel tanks for 10 months and bottled two months before being released for sale. Unfiltered.
Ideal consumption 3 years after the harvest, but it can be aged for 4-6 years.
CHARACTERISTICS
Color: ruby red.
Aroma: on the nose it expresses hints of small red fruits and spicy notes of black pepper.
Taste: on the palate it presents itself with good freshness, balanced and with a finish that returns to the spiciness.
COMBINATIONS
Balentìa is a red wine ideal to pair with roast red meats, game and tasty cheeses, but also a typical stewed lamb.
