GRAPES Barbera Sarda

ORIGIN
Vineyards surrounding the winery, characterized by medium-textured soils composed of clayey limestone of Miocene origin, medium hill.
PROCESSING
After destemming and crushing the grapes, maceration takes place for about 14 days at a temperature of 26-28°C. After racking, the wine is transferred to glass-lined concrete tanks where it undergoes malolactic fermentation and then transferred to barriques for at least 12 months of refinement. After this period, maturation is completed in glass-lined concrete tanks.
CHARACTERISTICS
Color: intense ruby red with purple reflections, tending towards garnet with aging.
Aroma: intense, persistent and complex. Hints of blackcurrant and cherry are recognizable. Spicy notes of cinnamon follow.
Taste: Round on the palate, velvety tannins accompany an exuberant and generous structure. Harmonious finish.
COMBINATIONS
Ideal for red meats, furred game and mature cheeses.
