Vineyards located in the surroundings of the winery in Sorso (SS).
PROCESSING
The Charmat method is used for the sparkling process. The vinification is done by pressing the whole bunch with cold static sedimentation. It ferments in reduction, at a controlled temperature of 12°C. The foaming is very slow with the inoculation of selected yeasts. It is refined in an autoclave, in contact with the yeast in agitation for 45 days.
CHARACTERISTICS
Color: Sparkling pale straw yellow. Very fine perlage with a thin but persistent crown.
Aroma: Complex fine aromas, initially floral in the notes of wild flowers, then fruity, plum and white peach.
Taste: Savory, reveals the same aromatic notes perceived by the nose. Finish of good persistence.
COMBINATIONS
Perfect aperitif sparkling wine, to accompany cold cuts such as guanciale, creamy and delicate cheeses. Suitable for dishes such as fried courgette flowers, fried shrimp, pizza not too seasoned, ravioli with delicate fillings.
