PROCESSING AND AGING
Medium Charmat is used as a method of sparkling wine. The vinification takes place through whole cluster pressing with cold static sedimentation. Ferments in reduction, at a controlled temperature of 12 ° C. The second fermentation is very slow with the inoculation of selected yeasts. Refine in autoclave, in contact with stirring yeast for 45 days.
Color: Pale sparkling straw yellow. Very fine perlage with a thin but persistent crown.
Bouquet: Complex fine aromas at first floral in the notes of wild flowers then fruity, plum and white peach.
Taste: Sapid, reveals the same aromatic notes perceived on the nose. Good persistence finish.
Perfect sparkling wine as an aperitif, to accompany cold cuts such as bacon, creamy and delicate cheeses. Suitable for dishes such as fried zucchini flowers, a fried shrimp, pizza not too seasoned, ravioli with delicate fillings.
