The Nuragic Village of Biriai is located on a large hill that ends with a plateau called "Sa Sedda", meaning "the saddle". This complex is characteristic because it presents two distinct cultural phases: the plateau, inhabited in the pre-Nuragic phase of Monte Claro (2200-2000 BC), and the northern sector, which attests to intense frequentation from the Nuragic Age to the Roman Age. The excavations conducted in 1979 on the hill have brought to light the residential structures of the Copper Age village with a megalithic sanctuary and a group of twelve menhirs, of which only two are still standing.

ORIGIN
Vineyards of about 15 years old, trained with spurred cordon and organic management on granite disintegration soils, located at the foot of Mount Corrasi.
PROCESSING
Manual harvest of the grapes, which once transported are subjected to pressing and the must left in contact with the skins for 12 hours, at cold temperatures, to favor a delicate color. Once the marc is pressed, the must is induced into alcoholic fermentation by means of selected yeasts, in stainless steel containers at low temperatures. This is followed by maturation in steel containers and refinement in the bottle for a few months, before being put on the market.
CHARACTERISTICS
Color: intense cherry pink with light pink hues.
Aroma: the floral notes of rose and fruity notes of cherry are immediately expressed on the nose.
Taste: fresh, young, well balanced.
COMBINATIONS
Biriai is a rosé perfect for an aperitif, accompanied by cold cuts and fresh and delicate cheeses. At the table it is excellent to accompany shellfish, first and second courses of fish.
