ORIGIN
Vineyards with low espalier training systems on calcareous-clayey soils at 200 metres above sea level, in the “Is Crabilis” area, in the Ussana (CA) countryside.
PROCESSING
Manual harvest of the grapes in the second ten days of October. Maceration on the skins for 36 hours, soft pressing and slow fermentation in thermo-conditioned steel vats.
CHARACTERISTICS
Color: intense golden yellow.
Aroma: intense and persistent with fruity notes of dried apricot, wildflower honey and Mediterranean scrub.
Taste: sweet and well-balanced, with a natural freshness due to over-ripening.
COMBINATIONS
Bisai pairs very well with typical Sardinian sweets made with almond paste, pine nuts and raisins. Ideal with small pastries such as fruit boats. Try with semi-mature cheeses.
