ORIGIN
Vineyards owned by the Winery, in the plains of Terralba. The soils are sandy-clayey, with good structure and depth.
PROCESSING
The harvest is manual and takes place between the last ten days of September and the first ten days of October. The vinification involves a fermentative maceration of about 15 days at a temperature of 26-28°C. Repeated pumping over and délestage ensure good extraction of the aromatic and colouring components. After fermentation and a short stop in steel, it spends about 12 months in French oak barriques. It is then refined for another 8 months in steel and 40 days in the bottle.
CHARACTERISTICS
Color: dark and intense purple red.
Aroma: ripe red fruits, among which cherry and blackberry stand out. Delicate balsamic and Mediterranean scrub nuances.
Taste: in the mouth it reveals the character of the structured wine which is evident but velvety and complex in tannin.
COMBINATIONS
Ideal to accompany dishes with intense and spicy flavours typical of Mediterranean cuisine. Semolina pasta seasoned with pork and lamb, ravioli filled with tasty cheeses and game-based risottos. It is enhanced in the company of mature cheeses.
