ORIGIN
The winery's vineyards are grown using traditional bush vines and low espaliers, on medium-hill soils, sometimes sandy, sometimes rich in clay and limestone, located in Uras and Terralba.
PROCESSING
After crushing and destemming, maceration at a controlled temperature follows, with the addition of selected yeasts, which lasts from 8 to 10 days. Once this phase is completed, fermentation continues in stainless steel vats at a controlled temperature of around 22/24°. Light clarifications are carried out, then the wine is left to rest for a few days. The refinement continues for about 4 months in an underground cement tank and then continues in thousand-liter barrels for about 2 years and again two months in stainless steel. The wine will then be bottled to complete the refinement in about 3/4 months.
CHARACTERISTICS
Color: between ruby red and garnet.
Aroma: alternating fruit and spices, also highlighting hints of rose petals.
Taste: a decisive sip is perceived, supported by a powerful tannin, in the integration phase.
COMBINATIONS
Essentjia is a red wine suitable for all meals, it pairs perfectly with game birds, roast meats, braised meats and mature cheeses.
