GRAPES Bovale grosso
GRADATION 13%
ORIGIN
Bush-trained vineyards aged between 30 and 40 years, on hilly terrain in the municipality of Mogoro and surrounding towns.
PROCESSING
Grapes harvested by hand, which once transported to the cellar, are subjected to destemming-crushing and started to alcoholic fermentation, in contact with the skins, for about fifteen days, with frequent dèlestage, all in steel containers and at a controlled temperature. The wine ages for about eight months in steel, before being refined in the bottle.
CHARACTERISTICS
Color: ruby red, characterized by purple reflections.
Aroma: intense red berry fruit, such as cherries, and dried fruit, floral nuances and Mediterranean herbs.
Taste: soft and warm, delicately fresh and tannic, intense and persistent.
COMBINATIONS
Tiernu is a ready-to-drink red wine that pairs well with well-structured cheeses, such as semi-mature Pecorino, and meat-based second courses, such as rabbit cacciatore.
