Located in the municipality of Oliena at 600 meters above sea level
PROCESSING
The grapes, when delivered to the cellar, are immediately subjected to the process of soft pressing, avoiding that the must is enriched with colouring substances contained in the skins. The juice, after being cooled and clarified, ferments at low temperature for about 10-12 days. After the first rackings, the refinement phase takes place in stainless steel tanks with repeated batonnage on the finest lees in order to increase the structure and body of the wine.
CHARACTERISTICS
Colour: bright straw yellow.
Aroma: delicate floral aroma reminiscent of yellow wild flowers, almond trees and roses.
Taste: balanced acidic freshness and a pleasant bitter aftertaste accompanied by a light residue of carbon dioxide that increases the sensations of savouriness and minerality.
COMBINATIONS
Excellent as an aperitif but versatile in accompanying, throughout the meal, fish-based dishes typical of Mediterranean cuisine. Delicate when paired with ricotta, sweet and soft cheeses.
