ORIGIN
Vineyards located in Northern Sardinia, on mixed clayey-calcareous soils , grown using the espalier system (spurred cordon and guyot).
PROCESSING
Manual harvest and pressing of the same in the cellar, fermentation with maceration of the skins for 7 days, maturation in glass-lined cement tanks and steel tanks. Aging in steel, cement and bottle for a few months before being put on the market.
CHARACTERISTICS
Colour: ruby red, with purple reflections, tending towards garnet hues with age.
Aroma: fragrant and vinous, predominantly red fruits.
Taste: soft flavour, rightly tannic.
COMBINATIONS
Mamaioa is a very versatile red wine, it can be paired with cheeses and red meats, try it on culurgiones with fresh tomato sauce and basil.
