The name Sartiu is intended as a tribute to a typical dance passage from Su Ballu Tundu.
GRAPES Cannonau
ALCOHOLIC CONTENT 13.5%
ORIGIN
Younger vineyards of the cellar, trained as saplings on granite weathering soils, in the countryside of Mamoiada (NU).
PROCESSING
Manual harvest of the grapes, spontaneous fermentation with indigenous yeasts, maceration for about twenty days on the skins. Aging for twelve months in concrete tanks followed by clarification before bottling.
We recommend letting it rest in the cellar for a maximum of 2-3 years.
CHARACTERISTICS
Color: Intense ruby red.
Nose: the nose expresses ripe red fruit, with a spicy finish of coffee and tobacco.
Taste: complex, elegant, good structure and pleasantly tannic,
COMBINATIONS
Sartiu is an excellent wine to pair with first courses seasoned with sauces, roasted and stewed red meats, but also medium/long matured cheeses.
