ORIGIN
The winery's youngest vineyards, trained as saplings on granite disintegration soils, in the countryside of Mamoiada (NU).
PROCESSING
Manual harvest of the grapes, spontaneous fermentation with indigenous yeasts, maceration of about twenty days on the skins. Refining for twelve months in cement tanks followed by clarification before bottling.
We recommend letting it rest in the cellar for a maximum of 2-3 years.
CHARACTERISTICS
Color: Intense ruby red.
Aroma: on the nose it expresses ripe red fruit, with a spicy finish of coffee and tobacco.
Taste: complex, elegant, well-structured and pleasantly tannic,
COMBINATIONS
Sartiu is an excellent wine to pair with first courses seasoned with meat sauces, roast and stewed red meats, but also medium/long-aged cheeses.
