PROCESSING AND AGING
The must obtained from a soft pressing is immediately cooled and then separated from the lees by static sedimentation and started with the first fermentation carried out by selected yeasts, at a temperature of 12 ° C for a period of about two weeks. Once the first fermentation is complete, the base wine is sent to the second fermentation in an autoclave. At the end of the second fermentation, it remains in contact with its own yeasts and is then bottled.
Color: pale straw yellow with greenish reflections.
Bouquet: elegant, intense with fruity notes.
Taste: lively with a good body and a pleasant floral freshness.
Ideal wine for aperitifs, appetizers and raw seafood.
