ORIGIN
Vineyards trained as saplings and against espaliers cultivated in the lower Sulcis, on soils that tend to be medium-textured, characterised by clayey, sandy and calcareous fractions.
PROCESSING
The grapes are subjected to red vinification with destemming and pressing, the must and the marc are transferred to thermo-regulated stainless steel containers, where the alcoholic fermentation takes place at a temperature between 25°C and 30°C. Frequent pumping over puts the yeasts and marc into circulation and promotes complete processing of the sugars and optimal extraction of the polyphenolic substances from the skins. Once this phase is concluded, the malolactic fermentation takes place, which gives the wine greater softness. The maturation continues in cement tanks for a few months, before the refinement in the bottle.
