PROCESSING AND AGING
Cryo-maceration of the skins for a few hours. The clear must ferments at a controlled temperature around 15 ° C for about 20 days. Refine for over a month on its noble lees acquiring complexity of aromas and structure. The refinement then continues always in steel until bottling.
