Tenuta Asinara has decided to resume an ancient tradition linked to the territory dating back to the ancient Romans. With the use of modern means such as the helicopter, the Sassu family has chosen to immerse the Vermentino grapes in the Gulf of Asinara from which the Cayenne Submariner is born, a unique and unrepeatable wine. Taking advantage of the saline action of sea water promotes dehydration and therefore aromatic and gustatory concentration.

ORIGIN
Vineyards owned by the winery, trained with spurred cordon on sandy-clayey soils at an altitude of 50 meters above sea level, in the countryside of Sorso (SS).
PROCESSING
The harvested grapes are first loaded into the press with whole bunches, without the stalks removed. They are then subjected to soft pressing completely without oxygen. Fermentation follows in 500 liter tonneaus, at a stable temperature of 15°C.
Aging for 8 months in tonneau on the fine lees at a controlled temperature, with frequent bâtonnage. It concludes with a month of bottle refinement.
Production limited to 1000 bottles.

Color: bright straw yellow
Fragrance: perfume reminiscent of citrus fruits and white flowers
Taste: dry, soft on the palate
COMBINATIONS
It lends itself very well to combinations with seafood appetizers, fregola with shellfish, fish soups, sea bass with artichokes, soft and medium-aged cheeses.
