With the Cayenna Submariner, Tenuta Asinara has decided to revive an ancient tradition, dating back to the ancient Romans. Using means such as a helicopter, the Sassu family has chosen to immerse the Vermentino grapes from which Cayenna Submariner is born, a unique and unrepeatable wine, in the Gulf of Asinara. Taking advantage of the saline action of sea water, dehydration is promoted and therefore the aromatic and gustatory concentration.

ORIGIN
Vineyards owned by the winery, trained using the spurred cordon system on sandy-clayey soil at an altitude of 50 metres above sea level, in the countryside of Sorso (SS).
PROCESSING
The harvested grapes are first loaded into the press with the whole bunches, not deprived of the stem. They are then subjected to soft pressing in total absence of oxygen. Fermentation follows in 500-liter tonneaux, at a stable temperature of 15°C.
Aged for 8 months in tonneau on the fine lees at a controlled temperature, with frequent bâtonnage. Concludes with a month of bottle aging.
Production limited to 1000 bottles.

COMBINATIONS
Cayenna Submariner is a white wine that lends itself very well to pairings with seafood appetizers, fregola with shellfish, fish soups, sea bass with artichokes, soft and medium-aged cheeses.
