GRAPES 100% Bovale (Muristellu)

ORIGIN
Vineyards owned by the winery, grown ungrafted on the sandy soils of the island of San Pietro, in Sulcis.
PROCESSING
The grapes are harvested at the perfect stage of ripeness and once transported to the cellar they are subjected to destemming-crushing and red vinification. Once fermentation is complete, Ciü Russu matures exclusively in steel for three months and a further three months in the bottle before being released for sale. Limited production of only 4000 bottles.
Russu can be drunk immediately or kept in the cellar for up to 10 years after the harvest.
CHARACTERISTICS
Color: ruby red with garnet reflections.
Aroma: elegant and complex notes of ripe red fruit and spices.
Taste: soft, warm, with good structure and persistence, with a present but elegant tannin.
COMBINATIONS
Ciù Russu is a red wine perfect to pair with important first courses, red meats, cured meats and mature cheeses.
