The Cannonau di Sardegna Nepente di Oliena is a DOC red wine which, to be defined as such, must be produced from Cannonau grapes grown in the municipality from Oliena.

The winery's own vineyards, the oldest of the company, over thirty years old, trained as saplings on the slopes of Monte Corrasi, on granite disintegration soils.
PROCESSING
After manual harvesting, in the first ten days of October, the bunches are carefully selected and subjected to destemming and crushing. The must is left in contact with the marc for about fifteen days at a temperature of about 25° C, with frequent pumping over and delestage, in order to ensure optimal extraction of the polyphenolic components of the grapes. Corrasi is first matured in refrigerated cement tanks and then spends at least 6 months in large Slavonian oak barrels and French oak barriques, with frequent batonnage on the fine lees.
CHARACTERISTICS
Colour: bright red with garnet purple reflections.
Aroma: rich and complex. Notes of red fruits, sweet and vanilla notes. Light spices recall the Mediterranean scrub.
Taste: strong, the subtle acidic vein leaves room for pleasant velvety and full-bodied sensations. Strong taste impact, very persistent.
COMBINATIONS
Corrasi accompanies dishes with intense and decisive flavors. First courses expertly seasoned with game sauces, ravioli filled with aromatic herb flavors, roasts and mature cheeses are excellent tasting companions.
