Vineyards located in the area surrounding the winery, soils composed of clayey limestone, Dolianova (CA).
PROCESSING
Manual harvest of the grapes. The must obtained from destemming-crushing is immediately cooled and then separated from the lees by static sedimentation and sent to the first fermentation by selected yeasts, at a temperature of 14°C for a period of about two weeks. Once the first fermentation is complete, the base wine is sent to the second fermentation in an autoclave and released for consumption.
Best consumed within the year following the harvest.
CHARACTERISTICS
Color: pale straw yellow with greenish reflections.
Aroma: intense, fresh and fruity, with notes of almonds and white flowers.
Taste: lively, soft and fruity with a persistent note of freshness.
COMBINATIONS
Dolì is a sparkling wine ideal as an aperitif and to pair with seafood and shellfish appetizers.
