Area surrounding the winery, Dolianova.
PROCESSING
The grapes are lightly pressed and the resulting must is immediately cooled and then separated from the lees by static sedimentation and sent for the first fermentation conducted by selected yeasts, at a temperature of 14°C for a period of about two weeks. Once the first fermentation is complete, the base wine is sent for secondary fermentation in an autoclave for a period of about 40 days.
Best consumed within the year following the harvest.
CHARACTERISTICS
Colour: bright pink with light purple reflections, fine pearliness and persistent crown.
Aroma: fruity and fragrant, with hints of raspberry, lychee and wild strawberry.
Taste: lively, fruity with a pleasant acidic vein and good flavour.
COMBINATIONS
Dolì rosè is a sparkling wine ideal as an aperitif and to pair with seafood and meat appetizers.
