The name of this label is a tribute to Don Efisio Carta, a noble member of an important family, owner of the Cabras pond (a clear reference is the marshy branches depicted on the label). On 16 November 1978 Don Efisio was kidnapped in the splendid seaside resort of Turr 'e Seu, in Sinis, and never returned home, despite paying a ransom.

ORIGIN

Vineyards trained using the Guyot system on medium-textured, sedimentary soils in the Sinis plain, Oristano.

PROCESSING

Once harvested, the bunches are subjected to red vinification by destemming and crushing. The maceration of the skins in the must lasts about ten days and takes place in stainless steel containers at a controlled temperature of 24°C. At the same time, alcoholic fermentation takes place. This is followed by aging for about a year in exhausted oak barrels and cement tanks, before final refinement in the bottle.

CHARACTERISTICS

Color: Red with garnet and purple reflections.

Aroma: Notes of red fruits.

Taste: Dry and soft, with good persistence and medium body.

COMBINATIONS

Don Efisio is a fresh, medium-bodied red wine that pairs well with first courses with sauce, roast meats and not too mature cheeses. It pairs well with both meat-based second courses and structured first courses, but also with certain fatty fish dishes, such as roasted mullet and eel.
