GRAPES Vermentino

ORIGIN
Vineyards trained on espalier with Guyot pruning, on granite disintegration soils, which give the wine the typical flavour of Vermentino di Gallura, located between 200 and 400 metres above sea level.
PROCESSING
Manual harvest of the grapes, taken to the cellar for soft pressing. The first-pressing must is then sent for vinification with selected yeasts, in stainless steel containers at a controlled temperature of about 17° C. Once vinification is complete, the wine ages in steel and in glass-lined cement tanks at a controlled temperature for several months, before being refined in the bottle and put on the market.
CHARACTERISTICS
Color: straw yellow
Aroma: notes of white flowers such as honeysuckle and fresh white-fleshed fruit, Mediterranean herbs and sea breeze.
Taste: savoury and fresh, with a certain structure and a discreet softness, fine aromas, good intensity and persistence.
COMBINATIONS
Elibaria is a pleasant white wine perfect as an aperitif, perhaps accompanied by small salmon crostini. It can give its best at the table, with refined seafood dishes such as a risotto alla pescatora.
