PROCESSING AND AGING
Following the destemming-crushing, the must is left in contact with the skins for a few hours, to ensure optimal extraction of the aromatic substances in the skins. Once drawn off, the must continues its alcoholic fermentation in stainless steel containers, at a controlled temperature, through the action of selected yeasts. At the end of the alcoholic fermentation follows the clarification and maturation in stainless steel containers, before the final refinement in the bottle.

Bouquet: intense and persistent, fine and elegant with fruity notes of sour apple and vegetables.
Taste: Dry taste, remarkable structure and thickness and persistence. Full and balanced.
