ORIGIN
Vineyards of the contributing members trained in Guyot on calcareous and granite soils, in the territory of Dorgali and the surrounding towns, at about 350 meters above sea level.
PROCESSING
After the manual harvest, the grapes are quickly transported to the cellar and subjected to soft pressing to obtain the free-run must. The must is fermented in stainless steel containers at a controlled temperature of about 18° C. Filine matures in cement tanks and then refines for a month in the bottle before being put on the market.
CHARACTERISTICS
Color: Straw yellow with greenish reflections, brilliant.
Aroma: Broad, persistent and fragrant, with delicate hints of almond blossom and light notes of toasted fruit.
Taste: Warm and soft, with a balanced presence of acidity that gives it greater shelf life.
COMBINATIONS
Excellent as an aperitif, raw seafood and first courses even with slightly savoury condiments, grilled white meats and fresh cheeses.
