The name Fola derives from the Gallura dialect and means fable.

ORIGIN
Vineyards owned by the Winery, trained with spurred cordon and sapling on sandy soils from granite disintegration, at 300 metres above sea level.
PROCESSING
Manual harvest of the grapes, which are destemmed and left to macerate for a medium-long period. Fermentation takes place in steel tanks, at a controlled temperature with maceration on the skins for about 10/15 days. The refinement is done partly in steel and partly in medium-sized barrels.
It can evolve and be consumed up to 12 years after the harvest.
CHARACTERISTICS
Color: bright ruby red.
Aroma: intense and enveloping, hints of balsamic herbs, chocolate, pepper and Mediterranean scrub.
Taste: soft and savoury, fresh and balanced.
COMBINATIONS
Excellent with first courses based on tasty meat sauces, spit-roasted lamb and grilled meats. It also accompanies medium and long-aged sheep's cheeses, especially if served with honey.
