ORIGIN
Vineyards trained in counter-espalier with Guyot pruning, on the calcareous-marly soils typical of this area, in the countryside of Serdiana (CA).
PROCESSING
The grapes are harvested in the first days of October. Once transported to the cellar they are subjected to white vinification, using pneumatic presses, in order to extract the best free-run must from the grapes. The wine matures for six months in steel containers at a controlled temperature, in the presence of the peels of dead yeasts, to improve its structure. Once maturation is complete, the wine is bottled and aged in glass for a few months before being put on the market.
CHARACTERISTICS
Color: pale straw yellow with greenish reflections.
Bouquet: elegant of white pulp fruit and white flowers. Mineral hints given by the particular terroir.
Taste: fresh and mineral, medium structure, smooth drinking and great finesse. Good persistence and intensity.
COMBINATIONS
Excellent as an aperitif, it goes well with savory appetizers and canapés. Perfect at the table together with seafood appetizers, delicate first courses and simple seafood second courses. A classic then with raw seafood, such as oysters.
