PROCESSING
The pomace, immediately after pressing, ferments in special containers, hermetically sealed and at a controlled temperature, to guarantee the best conditions for alcoholic fermentation. At the end of fermentation the pomace presents fragrant and fruity aromas typical of white grapes, obtained also thanks to the complete absence of air. The subsequent phase of distillation of the pomace occurs very slowly, in discontinuous cycle stills.
The product obtained is then left to mature for approximately ten months in small oak barrels.
CHARACTERISTICS
Color: amber yellow.
Nose: intense, characteristic on the nose, with hints of toasted wood.
Taste: full, dry, soft, slightly spicy.
COMBINATIONS
Pontis Aged Grappa is recommended for the end of a meal.
