GRAPES Cannonau, Nieddera

ORIGIN
The vineyards are located in the Sinis Peninsula area, 100 meters above sea level. The soils are partly of volcanic origin, partly alluvial sandy, almost clayey.
PROCESSING
The hand-harvested grapes are subjected to pressing and maceration of the skins for about 5 hours. Fermentation takes place at low temperatures (16-18°), mostly in steel and a small percentage in barrique. The two musts are combined after 6 months. Maturation on the yeasts follows, always divided between barrique and steel for at least 6 months. It refines for a few more months in the bottle before being released for sale.
CHARACTERISTICS
Color: Light, bright rose with orange reflections.
Aroma: Fine and elegant, hints of citrus, notes of raspberries and strawberries in a mineral finish.
Taste: Fresh and decisive sip, with citrus and saline returns, good persistence and final closure.
COMBINATIONS
I Giganti Rosa is a very versatile rosé wine, we recommend trying it as an aperitif, but it is excellent with tempura vegetables, fresh cheeses and first courses based on shellfish.
