ORIGIN
The vineyards are cultivated on sandy-clayey soils, trained with spurred cordon in Sorso (SS).
PROCESSING
The harvested grapes are cooled using cells. Subsequently, the best bunches are selected and soft destemming is carried out. This is followed by maceration for 15 days at a temperature of 24°C. Refines in wooden barrels for 6 months with frequent batonnage and subsequent 12 months in steel. Complete the process with another 6 months in the bottle before marketing.
CHARACTERISTICS
Color: Intense ruby red with garnet reflections.
Nose: Fine and intense, with evident notes of red fruit that alternate with spicy notes of pepper, leather and liquorice.
Taste: The aging in wood perfectly integrates the fruity notes without overpowering the flavor of Cannonau. In the mouth it is broad and persistent.
COMBINATIONS
Perfect when paired with tasty first courses. Ideal with second courses based on red meat such as beef, but also poultry and game.
