ORIGIN
Vineyards owned by the winery, characterised by sandy and clayey soils, trained using the spurred cordon system, Sorso (SS).
PROCESSING
Once harvested, the grapes are cooled using cold storage for 24 hours at 0 °C, a process also known as cryomaceration. Then they are soft pressed, in the complete absence of oxygen and rest for 4 hours for maceration. Fermentation takes place in 5hl barrels at a controlled temperature of 12 °C. This is followed by 6 months in tonneau and steel on the fine lees at a controlled temperature, in addition to a month of refinement in the bottle.
CHARACTERISTICS
Colour: intense straw yellow with greenish reflections.
Aroma: fine and persistent, notes of ripe white pulp fruit and iodine, alternating with light spicy notes.
Taste: mineral, savoury and soft.
COMBINATIONS
Excellent with appetizers and light fried foods. Perfect with seafood and shellfish-based first courses.
