ORIGIN
Vineyards of the winery's contributing members, trained as saplings on medium-textured hilly soils well exposed to the sun.

PROCESSING
Following the manual harvest, the grapes are subjected to destemming-crushing and fermentative maceration for at least fifteen days, with frequent pumping over and delestage, which guarantee the complete extraction of the polyphenolic and aromatic components of the skins. Maturation in concrete tanks followed by that in large Slavonian oak barrels, with frequent batonnage on the fine lees, in order to extract the noble components and increase its structure.

CHARACTERISTICS
Color: purple red with orange reflections, consistent.
Nose: on the nose it expresses intense aromas of red berry fruit, with ethereal notes of fruit in alcohol, spices such as nutmeg and cloves, floral notes of violets and balsamic notes.
Taste: full-bodied wine, intense and persistent, balanced between the softness of the alcohol and the well-smoothed tannins, savory.

COMBINATIONS
Structured wine to pair with strong dishes such as well-matured and blue cheeses. for a sustained aperitif, while at the table it can give its best with important and tasty first courses, fresh pasta filled with meat, roast second courses, lamb in fricassee, braised meats. Excellent with important traditional dishes such as Cordula (braided and roasted lamb entrails) accompanied with peas or boiled broad beans.
