In the Sardinian language, Jù is the name of the yoke of oxen that crossed the vineyards to open the land and make it fertile, ready to welcome the vine.

PROCESSING
Destemming and crushing are followed by maceration for about 12-14 days at a temperature of 26-28°C. After racking, the wine is transferred into glass-lined cement tanks where malolactic fermentation takes place and then transferred into new barriques where it ages for 24 months. The wine is then bottled and left to rest for another 6 months in a horizontal position before being marketed.
CHARACTERISTICS
Colour: intense ruby red, tending towards garnet with age.
Aroma: intense, deep and structured. Thick hints of ripe cherry, spices and balsamic notes of Mediterranean scrub can be recognized.
Taste: in the mouth it is a full-bodied and elegant wine, with aromas of ripe red fruit and liquorice emerging, accompanied by sweet spices and refined tannins.
COMBINATIONS
Ju is a structured red wine that pairs well with intensely flavoured dishes at the table: traditional Sardinian second courses such as mutton in Cappotto, stewed or roast lamb and intense, mature cheeses.
