KIOBU, which in Sardinian means knot or weave, represents the language and code of Audarya. It symbolizes the productive maturity and the union of vines that gave life to this wine, but also the deep ties, like the roots of a vine that intertwine in the soil. KIOBU is the invisible element that connects Audarya to the consumer, and the code present in the bottle is an enigma that reveals various details about the wine and the company.
GRAPES Carignano Bovale and Cannonau
ALCOHOL CONTENT 13.5%
ORIGIN
30-year-old vines trained as low-trellised saplings, on calcareous-clayey soils 200 metres above sea level, in Serdiana, in Parteolla.
PROCESSING
The different grapes are harvested separately with manual picking between the end of September and the first ten days of October. We then proceed to the maceration at controlled temperature and subsequent alcoholic fermentation at a temperature of 26-28°C.
Malolactic fermentation takes place in French barriques, in which the wine completes its refinement cycle for the following 18-24 months.
CHARACTERISTICS

COMBINATIONS
Kiobu is a structured red wine that pairs well with equally important dishes, such as second courses of game and red meat, roasts, and mature cheeses. Wonderful for meditation.
