PROCESSING
Winemaking is carried out at a controlled temperature of 24°C. The 48-hour cold pre-fermentative maceration follows the fermentative one which on average lasts 10 days. Frequent punching down and pumping over ensure optimal extraction of the color and aromas contained in the skins. The refinement continues in concrete and steel tanks where the controlled micro-oxygenation favors the preservation of delicate fruity and floral notes.
CHARACTERISTICS
Color: intense red with purple reflections.
Perfume: on the nose it releases delicate floral scents of rose and violet accompanied by notes of red undergrowth fruit.
Taste: in the mouth the evident acid note and the pronounced but soft tannin denote the youth of the wine.
COMBINATIONS
Red wine for the whole meal. Its versatility allows it to be combined with cured meat appetizers, first and second courses of the Mediterranean tradition and with fatty fish dishes seasoned with sauces and flavored with spices.
