Vineyards grown on granite disintegration soils, medium hill at about 350 m above sea level, Municipality of Monti, Gallura.
PROCESSING
Destemming and subsequent soft pressing. Fermentation at a controlled temperature between 16-18°C. Cooling to arrest fermentation -3° -4°C, filtration, sparkling wine production with the charmat method with natural fermentation. Bottling in a nitrogen atmosphere.
CHARACTERISTICS
Color: bright straw yellow, rich and subtle perlage.
Fragrance: delicate and fresh.
Taste: Dry, pleasantly aromatic and fruity flavour.
COMBINATIONS
Pedres Brut is a sparkling wine that pairs well with seafood and shellfish. Ideal as an aperitif at sunset.
