Vineyards trained with the Guyot system in the municipality of Oliena.
PROCESSING
Strictly manual harvest of selected grapes, followed by their cooling for one night. Crushing and destemming of eighty percent of the mass, while the remaining 20 percent is processed as a whole bunch. Fermentation in steel tanks at a controlled temperature. After racking, malolactic fermentation takes place, followed by refinement on the fine lees for another 8 months.
CHARACTERISTICS
Colour: intense ruby red.
Nose: delicate floral notes, notes of fresh red fruit, wild blueberries, berries and plum in alcohol.
Taste: harmonious, balanced sip, with a pleasantly soft finish.
COMBINATIONS
Liju is definitely a red wine to pair with meat-based second courses, braised meats and roasts.
