PROCESSING AND AGING
The bunches are selected and subjected to destemming-crushing. Once the must is obtained, it is left for a long period in contact with the skins to macerate, at a temperature between 25 and 28 ° C: at the same time there is alcoholic fermentation. At the end of this phase, it is aged in wooden barrels, as per tradition, in order to acquire structure, softness and complexity; the wine is then aged in the bottle before distribution.
FEATURES
Color: Intense ruby red with garnet reflections.
Aroma: It has a long bouquet, with particular finesse, with a hint of morello cherry typical of the territory of origin.
Taste: Wide, velvety, fresh and long.
FOOD PAIRINGS
It goes well with second courses of the earth, such as roast kid with myrtle scent and Sardinian pecorino.
