ORIGIN
The vineyards are trained using sapling and spurred cordon systems, located on sedimentary soils, with a sandy-loam mix with the presence of clay.
PROCESSING
After a short pre-fermentation maceration, the spontaneous yeasts begin the alcoholic fermentation which follows its course at a controlled temperature of 23°C, ending with racking after approximately 7 days. Maturation of 8 months in
cement tank, followed by bottle aging for almost a year.
CHARACTERISTICS
Color: ruby red, with light violet reflections.
Perfume: intense and immediate, characterized above all by floral and fruity scents.
Taste: dry, fresh and well-balanced. Its taste, full and rounded, has an important persistence, accompanied by a beautiful flavor.
COMBINATIONS
We recommend pairing it with a platter of cold cuts and cheese starters, but also first courses with tasty condiments. Also worth trying with typically Sardinian dishes such as roasted mullet.
