ORIGIN
Vineyards owned by the winery, grown ungrafted, without the use of chemicals, on land at 700 meters above sea level in the "Oprecada" area, Mamoiada (NU).
PROCESSING
Following the manual harvest of the grapes, fermentation takes place without the addition of yeasts and sulphites. Aging takes place in local oak and chestnut barrels for at least 7 months. Minneddu wine is neither filtered nor pasteurized, thus maintaining a high aromatic profile, without the addition of preservatives. It can evolve and be consumed up to 12 years after the harvest.
CHARACTERISTICS
Color: ruby red.
Bouquet: intense and enveloping, hints of balsamic herbs, chocolate, pepper and Mediterranean scrub.
Taste: soft and savory, fresh and balanced.
COMBINATIONS
Excellent with dishes based on tasty meat sauces, spit-roasted lamb and grilled meats. Perfect to accompany medium and long matured cheeses.
