The name Minneddu derives from the nickname of Giampaolo Paddeu's grandfather.

ORIGIN
Vineyards owned by the Winery, grown ungrafted, without the use of chemicals, on land at 700 metres above sea level in the "Oprecada" area, Mamoiada (NU).
PROCESSING
Following the manual harvest of the grapes, fermentation occurs without the addition of yeasts and sulphites. Aging occurs in local oak and chestnut barrels for at least 7 months. Minneddu wine is not filtered or pasteurized, thus maintaining a high aromatic profile, without the addition of sulphites/preservatives.
It can evolve and be consumed up to 12 years after the harvest.
CHARACTERISTICS
Color: ruby red.
Aroma: intense and enveloping, hints of balsamic herbs, chocolate, pepper and Mediterranean scrub.
Taste: soft and savoury, fresh and balanced.
COMBINATIONS
Minneddu is a structured red wine excellent with first courses based on tasty meat sauces, spit-roasted lamb and grilled meats. Perfect to accompany medium and long-aged cheeses.
