Selection of the best Monica grapes grown as saplings and against slightly expanded espaliers.
PROCESSING
Manual harvest with red vinification after destemming-crushing and fermentation of the must with the skins in stainless steel containers at a controlled temperature. Maceration is interspersed with frequent pumping over, which allows for better extraction of polyphenolic substances from the skins. Once alcoholic fermentation is complete, malolactic fermentation begins in cement tanks, before refinement in the bottle and release for sale.
CHARACTERISTICS
Color: ruby red with purple reflections.
Aroma: good aromatic complexity, the nose recalls hints of blackberry and blueberry.
Taste: pleasant on the palate for its good softness and structure.
COMBINATIONS
Antigua is a wine of great versatility, which goes well with both appetizers of land such as the typical Sardinian dry sausage, both tasty first courses and second courses of land that are not too intense. Also excellent with savory pies served as an aperitif. It goes very well with goat and lamb meat, as well as tasty cheeses.
