Vineyards owned by the winery grown on calcareous soils of sedimentary origin, Tenute Iselis, Serdiana (SU).
PROCESSING
After manual harvesting, the grapes are pressed and subjected to maceration and fermentation for about ten days. Malolactic fermentation follows in glass-lined cement containers in order to soften the structure. Iselis Monica finally ages in French oak barriques for twelve months before bottling.
CHARACTERISTICS
Color: ruby red
Aroma: intense and enveloping, with evident red fruit, morello cherry and plum, with notes of vanilla and cinnamon.
Taste: harmonious and velvety with very sweet tannins, red fruit and spices in perfect balance, long finish.
COMBINATIONS
Iselis Monica is a red wine that pairs well with traditional first courses such as malloreddus with sauce and tasty fish soups, stewed lamb. It also pairs well with medium-aged cheeses and grilled red meats.
