ORIGIN
The area surrounding the winery is characterised by medium-textured soils composed of clayey limestone of Miocene origin, medium hilly position, sub-arid climate.
PROCESSING
After a cold maceration on the skins for one night, the must is left to rest for 12 hours at a low temperature to be able to delicately clarify it. Inoculation with selected yeasts from the clean part and fermentation at 14°C for approximately 14 days. A racking after fermentation begins the period of refinement in contact with the noble lees for the entire period preceding bottling.
CHARACTERISTICS
Color: straw yellow.
Aroma: elegant and complex with notes of sweet spices, dried flowers and pleasant hints of toasted fruit.
Taste: full and persistent, with a pleasant flavour and a delicately almondy finish.
COMBINATIONS
Montesicci is a white wine ideal for pairing with seafood or medium-aged cheeses. A few years after the harvest, it becomes an ideal companion for meditation.
