PROCESSING AND AGING
In the cellar the must ferments at a controlled temperature with periodic pumping over. The malolactic fermentation is carried out completely and gives greater softness. The final aging takes place for 15 months in French oak barrels.
Color: intense ruby red.
Bouquet: intense fruity aroma with a licorice finish.
Taste: full taste with saline notes and softness with fruity sensations and aromas of caper, rosemary and pepper.
We recommend pairing with game dishes, white and red meats, but also aged cheeses and first courses from the land.
